
This is a go-to crockpot recipe for us because it is super easy, inexpensive to make, and just all around delicious! My husband calls this “Dump” soup, because you basically just dump everything in, but I didn’t think that sounded too appealing…so we will go with Can Taco Soup!
Ingredients:
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 (14.5 oz.) can petite diced tomatoes
1 (15.25 oz.) can sweet corn
1 (10.75 oz.) can cream of chicken soup
1 (10 oz.) can enchilada sauce
1 packet taco seasoning
4 boneless skinless chicken breast (frozen is fine too)
Small bunch of cilantro
Directions:
Place chicken breast on bottom of your crockpot
Dump all ingredients together on top of the chicken
Cook on high for 4 hours or low for 8 hours
Take out chicken and shred, put back in crockpot and stir. Then it is ready to serve!
Garnish with cilantro, tortilla chips, or avocado
