You know those recipes that you start with something you find online and then you make it so often that you adapt it to what you like? Well, what I’m sharing with you today is one of those! It is a go-to recipe for us because it is super easy, inexpensive to make and just all around delicious! This is a soup that my family and I love (toddler included)!
1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 (14.5 oz.) can petite diced tomatoes, drained
1 (15.25 oz.) can sweet corn, drained
1 (10.75 oz.) can cream of chicken soup
1 (10 oz.) can green enchilada sauce
*1 (32 oz.) can chicken broth
1 packet taco seasoning
**1 cooked rotisserie chicken (meat taken off the bone and shredded)
Small bunch of cilantro
Mix all ingredients together in a large pot.
Heat until warm, stirring occasionally.
Garnish with cilantro and serve with tortilla chips.
*you may not need to use the whole 32 oz can of chicken broth, especially if you like soup a little thicker; start pouring and use as much as you desire
**alternatively you could cook 2-3 chicken breasts in the oven or instant pot and shred or chop and add
